Our first recipe from our nutritionist Lynne. A warming, healthy and easy soup!
1 tbsp olive oil
1 medium onion (white or red) finely chopped
1 medium potato or sweet potato
1 tsp ground coriander
450g carrots chopped (scrubbed and with skin on)
1.2l vegetable stock (I use Kallo Organic Vegetable Stock Cubes, they also do a low salt version)
A handful of fresh coriander
In a large pan, heat the oil and gently fry the onion until soft
Add the ground coriander and potato, stir and cook for 1-2 mins
Add the carrots and the vegetable stock, bring to the boil, then reduce to a simmer for 20 mins or until the carrots are tender.
Allow to cool slightly, then add the fresh coriander and blitz in a food processor or with a handheld blender.
Season to taste and serve.
